Apple Cinnamon Loaf

I’ve gotten really into baking recently (to the point where I’ve had to take cupcakes to many of the neighbours just to have room in the pantry and freezer). I’ve been mostly experimenting with unusual flavours and different recipes… for example a lavender cake for mum’s birthday (not my fav, but it looked pretty🤷♀️):
My favourite so far, has probably been my most recent experiment… Most recipes I use are slightly adjusted versions of one’s I’ve found online to better suit the flavour profile I’m looking for/to suit being dairy free etc. This recipe was no different, but has been a bit of a crowd-pleaser never-the-less.
Apple Cinnamon Loaf
Ingredients
2 cups all-purpose flour
¾ cups granulated sugar, divided
2 teaspoons baking powder
1/2 teaspoon salt
3 teaspoon ground cinnamon (honestly the more the better though…)
1/2 teaspoon nutmeg (optional)
2 large eggs
1/2 cup milk
1/2 cup vegetable oil
2 peeled and diced apples
1 teaspoon vanilla extract
Optional Topping
Unsalted walnuts
Finely chopped crystalised ginger
Instructions
Preheat the oven to 175°C. Line a 9×5-inch loaf pan with baking paper.
Prepare the apples and put to the side for later.
In a large mixing bowl, combine the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg. Mix well.
In another bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract until well combined.
Gradually stir the wet ingredients into the dry ingredients. Mix until just combined. Fold in the prepared apples.
Pour the batter into the prepared loaf pan, spreading it evenly.
Add desired toppings
Place the pan in the preheated oven and bake for 55-60 minutes, or until a toothpick inserted in the centre comes out clean.
Once baked, remove the loaf from the oven and allow it to cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely.

Extra Notes:
An interesting twist on this recipe is swapping out cinnamon for cardamom and apple for pear. You can keep everything else the same, but I added in 1/2 tsp of ginger too.
